As Chef and Apprentice, Jeff Orr and Sean Pharr created a memorable tomato dinner. Now, as Chef Sean leaves the ChopHouse to open the produce-driven restaurant, MintMark, and Chef Jeff takes the reins of the ChopHouse, the two talented Chefs collaborate again on a tomato dinner, this time as peers.

ChopHouse Recipe  Seared Ahi Tuna With Wasabi Cream

Ahi Tuna 7-8 oz. fillet


Wasabi Cream

1 Cup Wasabi

4 Cups Sour Cream


Curry Saki Gastrique

1 Bottle of Saki

3 Cups Rice Wine Vinegar

3 Cups Sugar

2 Tablespoons of Curry



1.Reduce 1 bottle of Saki by half.

2.Add vinegar and sugar.

3.Reduce for 10 to 15 minutes.

4.Stir in the curry powder.

5.Remove from heat and cool.
